It might seem like the summer weather is far away when you take into consideration all of the rain that we have been having here in New York City lately. Maybe it is my wishful thinking longing for some sun and fun outdoors but I am really looking forward to cookouts and family get-togethers this summer.
Since my brother and father work in the produce business, I always have access to fresh fruits during the spring and summer. There is nothing better than enjoying fruit salad with your loved ones when the weather is warm. Honey Lime Rainbow Fruit Salad is one of our favorite recipes because, not only is it incredibly easy to make, but it is delicious too!
It’s also an extremely versatile recipe because you can substitute any of the fruits for those that you prefer or that are more pleasing to your palate. Not to mention any that you need to exclude due to any existing food allergies that you may have. So have fun with it and serve it at your next outdoor event this summer! Your family is sure to love Honey Lime Rainbow Fruit Salad as much as mine does!
Honey Lime Rainbow Fruit Salad
Yields: 6 servings
Prep Time: 5 minutes
Ingredients:
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup mandarin oranges
- 1 cup grapes, sliced in half
- 1 cup cherries, sliced in half and seed removed
- 1 cup pineapple chunks
- 1 lime (juice and zest)
- ¼ cup honey
- 1 tablespoon orange juice
Directions:
- To prepare the dressing, combine honey, orange juice, lime juice and zest in a small bowl. Whisk to combine.
- In a large bowl, combine all of the prepared fruit and stir.
- Pour the honey lime dressing over the fruit and stir lightly to coat.
*Fruit salad should be kept refrigerated until ready to serve.

I love fresh fruits during the summer- it is hard to get good fruit here in the midwest, so in the summer we really relish all the good juicy fruits from the local farmer’s markets. How lucky to have all that fruit at your fingertips!

I could eat an entire bowl of fruit salad every single day. Summer is my absolute favorite time for whipping up a fruit salad because there is so much great options to choose from.
Besides making a delicious fruit salad in the summer, I also love tossing some peaches and plums on the grill. I brush them with some honey or agave and let them get all juicy. Then I serve them with yogurt or vanilla ice cream.
