Piña Colada Popsicles

    A few weeks ago, my husband and I had the opportunity to go away for the weekend without the kids for the first time in over ten years.  Although we really missed our boys while we were away, having this time together made us realize how important it is to set time aside whenever possible to bond as a couple.  

Piña Colada Popsicles

    Since we can’t always get away, I started thinking about ways we could do this right at home. This doesn’t mean that we can’t enjoy some adult treats after the kids go to bed.  It’s summer vacation here in New York City so what better way to cool off after a long, hot day than by enjoying some Piña Colada popsicles.  These are strictly for adults as the recipe does include rum.

PIÑA COLADA POPSICLES

This recipe will make 12 piña colada pops:

INGREDIENTS

2 cups pineapple juice
2 cups cream of coconut
1/4 cup rum (or coconut rum)
Optional- maraschino cherries

DIRECTIONS

1. In a large pitcher, add the pineapple juice, cream of coconut and rum. Stir to mix well.
2. If using the cherries, add 2-3 to each mold.
3. Pour the piña colada mixture into each mold, up to the fill line.
4. Insert the sticks/top inside each mold and freeze overnight.
5. ENJOY!!

    If you prefer the non-alcoholic variety of these popsicles, all you have to do is omit the rum from the recipe.  They are delicious either way and you can still spend some romantic time with your partner enjoying these delicious treats.

    After all, what really matters is having that special time to connect with one another away from all of the stresses and responsibilities of raising a family.  You’ll be glad you made that time for each other.

As for romantic times, my husband and I go big on “alone trips” but sometimes enjoying some iced tea or an adult beverage on our deck looking over our land and watching the deer feed is just as wonderful.

  17. When we were traveling full-time with the kids, romantic time was almost impossible. Now that we are moving into a house, I am hoping to find more special time. We like to sit outside by a fire and talk with a drink. These are a great start to get us back on track!

And to answer your question, we try to do date night once a month and a vacation once a year 🙂 We don’t have kids but life still gets in the way so it’s still important to forget all that once in a while you know?

It is true that the stress of raising a family, running a household and minding the family budget can take a toll on your relationship with your partner.   39. I do love Piña Coladas. I think I would make 1/2 with rum and 1/2 without–these sound do delicious and would be perfect for the heat wave we have been experiencing in NY!
