    Lately I have been dabbling in trying out new recipes and adding a little bit of my own flair to them.  I’ve never been especially talented in the culinary arts but I do know what kinds of foods I enjoy eating so I try to create dishes that I know my family and I will enjoy.

    One of my favorite desserts has always been Spanish Rice Pudding or Arroz con Leche.  When I found out that M&M’s® Crispy are back, I immediately knew that I wanted to add them to this dish because of their delicious milk chocolate with a crispy rice center.

    I knew that adding this crispy texture to rice pudding would make for a more enjoyable treat.  The best part is that they are only 180 calories per serving so we can all enjoy them guilt-free.  If you have never tasted M&M’s® Crispy you can now taste what you have been missing because they are back and just as yummy as ever!

    This week, I decided to make Arroz con Leche with my boys so I took them with me to our local CVS Pharmacy to buy some M&M’s® Crispy for our recipe.  Thank goodness that they come in small bags that you can enjoy for a quick snack and larger bags for recipes and sharing their crispy rice center.  I let the boys munch from their individual small bags while we drove home and they loved how crispy they were.  You can check out how we made our Arroz con Leche below…

Arroz con Leche/Spanish Rice Pudding:

Ingredients:

  • 2 cups milk
  • 1 1/2 cups medium grain or long-grain white rice
  • 1/2 cup of sugar
  • 1/2 stick no-salt butter or margarine
  • 1/2 a lemon peel
  • 1 cinnamon stick
  • 1/2 teaspoon pure vanilla extract
  • 1-2 tsp ground cinnamon

Preparation:

  • Bring 3 cups of water to a boil in a big pot.
  • Wait for it to boil and then add the rice while reducing the heat and letting it simmer.
  • Cook the rice over low heat and keep it covered until all the water is gone for about 15 minutes.
  • Uncover the cooked rice and stir in the sugar, lemon peel, cinnamon stick, and sugar for about 35 minutes until the rice is tender and thick. You should stir the mixture often during this time.
  • Stir in the vanilla extract and let the mixture cool over buttered wax paper.
  • Sprinkle ground cinnamon on the top and some crushed M&M’s® Crispy

Enjoy it warm or cold!

    I would have never thought to do this with rice pudding. My husband is picking on me because he was thrilled the crispy M&M’s were coming back and I never knew they were gone – I am a Peanut M&M girl!
