Last week we went back to school here in New York City. I say “We” because not only did my boys return to school, but I also returned to my middle school classroom after being on vacation for the summer. As you can imagine, our schedules have gotten quite hectic again and I have to get creative when it comes to preparing meals or snacks because I simply don’t have the time to spend hours in the kitchen since I’m a Working Mom.
One of the things that I have noticed is that, despite the fact that my sons eat both breakfast and lunch at school, they come home every single day famished and asking what they could eat. I don’t have to worry about scrambling around to get ingredients to prepare snacks or meals for my boys anymore thanks to Popcart for FreshDirect. They have partnered with Foodily, the world’s largest recipe search engine, to create a tool that helps you shop while you try out different recipes.
Popcart is so easy to use! All you have to do is download the Popcart bookmarklet. Once you add the button to your browser, you can go to any recipe, highlight the ingredients, and click the “Popcart it” button to add the ingredients directly into your FreshDirect cart (or even swap products before adding).
I was so excited to use it to find the ingredients for Chef Anne Burrell’s Plum Cornbread Recipe. My sons love cornbread and I love the idea of infusing it with some fresh fruit for them. Here is the delicious recipe:
PLUM CORNBREAD RECIPE WITH CHEF ANNE BURRELL
Prep: 30 min
Cook: 30 min
Yields: 6 to 8 servings

Plums:
• 4 to 6 black plums, sliced (if they are large, use 4; if they are small, use 6)
• 3 tablespoons sugarCornbread:
• 1/2 stick melted butter, plus extra for baking pan
• 3/4 cup all-purpose flour
• 1 cup yellow cornmeal
• 2 teaspoons baking powder
• 3 tablespoons sugar
• 1/2 teaspoon kosher salt
• 1 cup milk
• 3 tablespoons honey
• 1 teaspoon vanilla extract
• 2 eggs
• 1 pint vanilla ice cream, for servingDirections
Plums:
In a small bowl, combine the plums and sugar and let sit at room temperature for at least 30 minutes.
Cornbread:
Preheat the oven to 350° F. Butter an 8-inch cast iron skillet or an 8-by-8-inch square baking pan.
In a large mixing bowl, combine all of the dry ingredients. In another mixing bowl, combine all the wet ingredients and whisk to thoroughly combine. Make a well in the dry ingredients and pour the wet ingredients into the well.
Mix gently to combine. When the mixture has just come together, transfer it to the prepared skillet or baking pan. Sprinkle the plums in an even layer over the top of the batter. Bake in the preheated oven for 25 to 30 minutes. Remove from the oven and let cool before cutting. Serve topped with vanilla ice cream.
My boys love this recipe because you can top the cornbread with some ice cream and even substitute the plums for other types of fruits. It’s the perfect treat for them to have after a long day at school filled with learning and all kinds of activities.

My favorite back to school recipe is biscuits and gravy. My kids love to have that on the first day of school. I’d use Popcart for that. 🙂
